This was our leftover Pioneer Woman's
chicken soup. Delicious! The first time I cooked with parsnips. Her method is simple and straightforward. Very flavorful ( I'm sure using some of my homemade broth contributed to the overall richness!). For the second go around, I mixed in some leftover cooked rice. We enjoyed it both ways. Next time, I might throw in a couple potatoes and some extra carrots.
The perfect end to a blustery, cold day!
