Food Prep for Tom and the Munchkins

I will be gone this weekend visiting a friend, and Tom will be home alone with the children. That will be a first for us! I think the kids will have a great time doing things with their Daddy, but I'm sure going to miss them.

I've been making some preparations to assist Tom in the whole "what do I feed them?!?" adventure.

Here are some things I have in the freezer so far:

Turkey Vegetable Soup, to be heated and served with whole grain crackers
Salsa Rice Chicken and Corn Casserole
Turkey Stuffing Casserole (for church potluck on Sunday)
Homemade Breakfast Burritos
Fish sticks

I plan on stocking up on staples for peanut butter & jelly sandwiches, lunch meat sandwiches, grilled cheese sandwiches, cereal (the kids will be thrilled with that!), applesauce, yogurt cups, carrot sticks, and other easy "finger foods".

I even bought a baking mix so Tom could whip up some pancakes with virtually no nutritional value! Hey, I might even buy some frozen chicken nuggets. We've all gotta live on the edge sometimes. *wink*

Today I will be mixing up a batch of refrigerator bran muffins, which is a family favorite and so easy to plop into muffin tins and bake.

I think they'll survive, don't you?

  3. I don't think you'll even have to cook when you come back you've prepared so much in advance! I know that my boys veer off course when I'm gone!
